Food Challenge: Calamari Tubes In A Sauce With A Cheesy Salad

Hi everyone!!

As I sit here typing out this post, I’m actually reminiscing about the winter cold…
I suppose it is really true that we as humans will never be satisfied by what is, right now.

The only great thing about summer for me is the ability for me to quickly slap together a meal with minimum time in the kitchen.

This evening was no exception.

Here’s my quick and healthy recipe:

Calamari Tubes With Lemon Butter Sauce & A Cheesy Salad by Rubina Hassan.

1 packet Calamari tubes (I have a friend that sells single portion calamari tubes)
Milk, preferably full cream.
Green Masala ( a mix of garlic and green chillies ground together)
Red Chilli Flakes (optional)
Salt
Freshly Ground Pepper

Lemon Juice
Butter

Method:
When preparing calamari, take it out of the freezer about 15 minutes before cooking.
Rinse under water and drain
Put in a bowl with the rest of the ingredients, except lemon juice and butter.
Leave to marinate one side while making the salad.

Cheesy Salad:

Romano tomatoes ( small/cherry tomatoes will work)
Cucumber
Red onion
Mozzarella cheese
Feta cheese
Pimento Stuffed Olives
Basil
Coriander

Method:
Wash veggies under running water. Rinse herbs.
Slice tomatoes in half… If it’s too big, slice into quarters. Slice onion thinly. Cut cheeses into squares. Slice cucumber into thick rounds and half them. Rough chop coriander, and tear basil leaves up. Add in olives.
Toss everything together. Serve with a creamy dressing, Knorr Creamy Italian Dressing is a great option.

Now, to finish off the calamari:

Take butter and add to a pan on medium-low heat. Melt the butter and add the calamari tubes. Cook for 2 minutes and then add in the marinade. Cook for a minute and then add in about two tablespoons of lemon juice.
Cover your pan and cook for 5 minutes.

Take out the calamari tubes and set aside. Reduce the sauce until you achieve a nice thickish consistency.
Pour over calamari tubes and serve with salad, creamy Italian dressing and crispy rolls or ciabatta slices that have been lightly toasted.

This salad is also great with a tangy yet spicy roast chicken or with my Thai Inspired Fish.

I do know that I haven’t put in measurements, the reason is that I honestly didn’t measure anything.
I just put in what I thought was enough.

My salad was enough for 4 people with generous helpings for each. The calamari was just for me as the rest of my family is a bit … Squeamish, I guess… When it comes to cooking or eating certain things…

Like sushi… And mushrooms… And crab sticks.. And … The list really goes on and I fear you’ll be bored in no time, so I’ll stop here.

In any case, the above recipe works with fish as well, white fish like hake and kingklip or line fish etc is preferable.

A New Year: Are You Up To The Challenge Of 2015?

It’s a new year… I think I’m still kind of trying to wrap my mind around that because it feels unreal…
Time is moving so fast that I guess we don’t actually realize it… Or should I say I don’t…?!

I just got notified by WordPress that it’s my 4th Bloggerversary!!! Woohoo!!!

I get shocked each time I receive such notices.
But then I get such a happy feeling to know that I have so many wonderful people I can share things with. ( Shoutout to all my fabulous subscribers!)
It’s quite rather awesome!!

Well, as the holiday season draws to a close and many matriculants have just received their results, I would like to just say congratulations to each and every one of you.
This is just the beginning of your journey and I sincerely pray that you go on to achieve great things in life.
Always remember though, what is right for someone else, may not be right for you, so don’t be disheartened, but rather look upon your trials as a challenge and work to achieve your goals.

I expect this year to be full of challenges for myself and I really believe that everything is going to change for the better.

For myself, a new job, an adventure, some new challenges and accomplishing four of my dreams are what is on my list to achieve.

I no longer believe in resolutions but in goals in which I can really achieve.

For example, I have been on Herbalife for a few months now, and I can really see the difference in how my body has changed, and I can feel the difference in how my energy levels are. Of course exercise n eating healthier counts towards that feeling too, but I can honestly say, I haven’t felt this good in …. Ever!
So.. I’m already on my way to completing my weight loss goal.

Being more organized is also on my list.
I’ve already begun working on this and not only does it help me but it helps those around me too.
Whether this is for work or at home or for an event, organization really is important.
For me, staying organized is a challenge but I plan on sticking to it every day!

There’s so much one can achieve when one is inspired to.

iPhone 5, iPhone 6 & No WiFi!

Ever have one of those days that just goes right…. And then… It strikes!

The worst thing possible in today’s technological world!!!
Well.. After suffering a small panic attack due to my iPhone 5 falling… I ended up having a bigger one!

My phone refused to unlock…. It seems the touch digitizer screen has like ribbons running down from the top to the bottom of the phone, and nothing I’ve tried doing seems to work. Although, I do get all my notifications and the voice control works and so does everything else…even the Bluetooth pairs up to my car’s radio and plays…. except the locking… It just doesn’t want to unlock…sigh.

Sooo……

What do I do?

Easy… Go to the store I have my contracts at and find out if I’m due for an upgrade. Which, thankfully, I was.

Although I’ve taken on the upgrade, I do seem to have a new problem.

We don’t currently have wifi… Unlike other countries where wifi is considered a Human Right, an example would be Thailand where there’s free wifi EVERYWHERE, South Africa isn’t all that bothered about such things… Which is a huge shame!

And yes, we should install our own wifi or get mobile wifi etc etc.
A few months ago, when we contacted the lovely Telkom, we got told that the wifi download speeds in our suburb is soo slow, that it’s just not worth it putting it in. This coming from a source who works in the suburb we live in.

So now I am in a bit of a problem, because all my other posts and photos and pretty much everything I need to use, is on a phone I can’t access…

Although, with this new phone, which is considerably larger than the iPhone 5, and yes I have small hands so I need both to work on it lol, I guess in a way I’m impressed with it.
The clarity on the iPhone 6 Plus is definitely a good thing and it does possess the same user friendly operating system I have come to know and love.

But all it is really, is a bigger version of the iPhone 5.
It does have a new Health app, a Numbers app which is quite handy for planning events or keeping track of expenses, etc (my new favorite app I think), iMovie which makes it easy to browse and share your favorite moments & watch trailers and movies made by you, using the themes available. It uploads it all to iCloud as well, yay!!!
Keynote, GarageBand and Pages are new too.

But… None of that has really solved my problem…

If any of you out there are tech’s and you know what I should do in order to get my iPhone 5 working again, please feel free to comment, I’d be ever so grateful.
The one reason I don’t want to send my phone in to the repair centre is because I’m afraid they may reset my phone without my consent and it may just erase everything straight off.

In the mean time… I’m looking at getting mobile wifi and perhaps someone will suggest a really great operator that’s reasonably priced and offers great service.
Oh and a recommendation for someone that has fabulous iPhone 6 Plus covers… Must be something travels easily as I’ll be traveling quite a bit in the next month to events as well as to different cities for different events.
