Dinner In A Flash

Today’s one of those days where my mother and my sister went out for the day… From what I could gather, it was mostly wedding related stuff.

That leaves me at home, alone, with the expectancy having dinner ready by the time my father gets back home.

So around 2pm, I went hunting for mutton in our freezer, only to be disappointed at not finding any.

So… What to do?

Then I spotted Beef mince! Lets make kebabs!

Here’s how I made them!

Beef Kebabs by Rubina Hassan:
Ingredients:
500g beef mince, rinsed and drained
1 onion finely sliced
2 slices of bread soaked in milk
1 tablespoon green masala ( a ground mixture of green chilies, garlic & ginger)
2 tablespoons finely chopped parsley
2 tsp salt, level
1 tsp nutmeg

Mix all the above together, and roll mixture into balls. Use water to dampen your hands to prevent the mixture sticking to them.

Fry in medium level, hot oil until brown all over.

Drain on kitchen paper/ towel and then put into a bowl to serve immediately.

Enjoy with green chutney, red chutney, or in a tomato based sauce or white sauce with pasta, and/or crunchy garlic rolls

My Baking Business Officially Opened: Fairy Dust Delights

Hi everyone!

I have a special post today.

The reason its special is because I’m officially launching my baking business!

Yay!

Admittedly over the last year, I’ve been putting up posts and photos of my baked goodies at http://www.fairydustdelights.com but I was doing it on a part time basis.

Thankful for repeat clientele who are so excited and truly enjoy my products, I have decided to do my baking full time.

Food Challenge: Steak Wraps With A Middle Eastern Twist

Its still holiday season, and I finally have time to go in the kitchen and cook!

Also, my mom and sister are away on holiday, my little sister’s at her friend’s house and my dad went fishing, which has left me home alone to do as I please, :-) .

I love experimenting with dishes, especially ones I haven’t made before.

Recently I’ve been looking at a lot of Middle Eastern recipes (and doing a fair bit of drooling while viewing the photos), which look absolutely delicious!

So this is what I did:

Please note: the quantities I made was for 2 servings.

I began with marinading a piece of rump steak, cut into strips, with:

1tsp crushed chillies (optional, I love hot and spicy food)
1tsp crushed garlic
1tsp coriander
1tsp cumin
2tbsp olive oil
Salt to taste
Pepper to taste

All mixed in a bowl and I let the steak marinade for about an hour.

I then chopped an onion and fried until semi caramelised. (You could caramelise it but I was starving and had no patience.)

I bought ready made Tortilla Wraps ( yes I know.. Its cheating but seriously, who has time to make them from scratch these days?)

I also bought a small jar of Hummus.. (Ok this I admit I have the ingredients but had never tried making it before…shall try soon, God willing.)

The steak, once marinated, was fried in the same pan as the onions for added flavour.

To assemble:

Take a tortilla,spread with hummus, add some onion, then place steak strips and a little chopped coriander (optional).
Now roll, slice and serve.

Yum! :-P

I’m guessing it could be made with some ciabatta or small french bread loaves as sandwiches. Maybe add some lettuce and tomato or cucumber slices to it. Or even grilled cherry tomatoes..
I suppose one would only be limited by the ingredients on hand, but give it your own twist if you’d like and let us all know by commenting.

Food Challenge: Tiramisu

I LOVE Tiramisu!

The rich creaminess and the of it is just divine!

But… Yes, there’s a but… I tried to make it before and sadly, it turned out to be a dismal failure.

That was a small knock to my confidence as I usually have absolutely no problem in making anything… Especially the first time around.

However, the last time I made it, I had pretty much no understanding of the recipe as it was rather confusing I guess… But its about 2 years and I finally decided to give it another go.

Also I was really in the mood for it and hadn’t had it in a looooonnngggg time.

Soo… Here’s the recipe I used.
(Considering I’d been watching the Food Network Channel… I kinda winged it with my own version.)

Tiramisu by Rubina Hassan (suitable for lacto – ovo vegetarians)

Ingredients:

1 tub Mascarpone Cheese (I used WoolWorths brand)
1 tub Cream Cheese (I used Philadelphia brand)
500 ml Whipping Cream (WoolWorths Ayershire brand) (did I spell that right??!)
3/4 – 1 cup icing sugar
3 tblsp Coffee (any strong coffee you have)
1/2 – 1 cup hot water
2 packs of Boudoir Biscuits (lady finger biscuits)
1 tspn Vanilla Essence
Cocoa powder, for dusting.
Strawberries, optional.

Method:

Whip the cream until it resembles fresh cream. Than add the 1 cup icing and whip until just incorporated.
In a separate bowl mix the softened cream cheese and mascarpone together and then add to the whipped cream and sugar with the vanilla essence. Mix until well incorporated. Set aside.

In another bowl, mix the coffee powder/granules with hot water. If using straight from a coffee machine, don’t dilute.

Using a serving dish of your choice, begin by briskly dipping the boudoir biscuits into the coffee, and layering it on dish, covering the bottom. Once done, put a layer of the cheese/cream on top, and then do another layer of biscuit, ending of with the cheese/cream mixture.

Dust with cocoa, and decorate with sliced strawberries if desired.

I realize that this is a rich dessert, but its quite lovely.

A great idea for a dinner or even a party would be to make small individual servings. Takes a little more time, but your guests will appreciate the final product.

The photo was taken with my phone, and it was a last minute decision to snap it. Apologies for the ‘not so attractive’ presentation but if I didn’t snap it right there and then, there would have been no photos at all, ;-)

Helping Those In Need During This Freezing Season Of Winter

In light of this freezing weather we’re experiencing in South Africa, many people have begun to collect and distribute blankets and groceries.

I do believe many people are genuinely doing collections and distributions, however there are some unscrupulous people who collect and sell the stuff you donate so please be aware.

As most of you know, charity work is something I love doing. To be able to help someone in need, is an honour as they teach you how to share and truly appreciate what Allah (God) has bestowed upon you.

Religion and race doesn’t come into it, as many people, whether they are black, white, coloured, indian, Muslim, Christian, Jewish, Hindu, Tamil, etc. need our help as one human being to another.

I simply urge those of us that are blessed and in a position to help the poor within your community. Whether it be with food, blankets, clothes, shoes, baby’s clothes, toiletries, domestic cleaning agents, literally anything you have, people will appreciate it.

We all know that things like a hot shower, hot food, hot drinks, and a warm bed are among the things we want on such blistering cold winter days and nights. For the poor, destitute and homeless, these things are truly a luxury.

Some good news is that Gift of the Givers is hosting 2000 people tonight at the Oriental Plaza to assist the homeless and destitute by feeding them and distributing necessities to the poor. Volunteers are needed, if you are available. Please join us.

Islamic Relief South Africa’s Fundraising Dinner

Hi everyone

Has anyone heard of IRSA? Its short for Islamic Relief South Africa. Or perhaps just Islamic Relief?

If not, that’s ok.

Islamic Relief is a Charity Organisation which is Worldwide. It helps out in times when disasters, either naturally or man made, strike.
Although it is an Islamic organisation, it serves all people, of all religions, all places, and all cultures.

They do amazing work and its not only during the disasters that they help out, but also afterwards in order to help those that need everything from Medical attention to Food and Clothes.

On the 26th of May 2012, Islamic Relief held a fundraising dinner at the Sultan Bahu Hall in Mayfair, Johannesburg.

I was quite impressed by the work the volunteers had put in to make the evening a success as the hall was decorated beautifully, the food was delicious and hearty, and many speeches were given.

It is through those insightful, heartwrenching speeches and photos, which brought tears to the eyes of many attendees, that people opened not only their wallets, but also their hearts in order to raise funds to help those in desperate need of the basics of life.

Islamic Relief Worldwide is in need of assistance, and I sincerely appeal to anyone out there who is able to donate anything you can afford, to help out.

I do try to do as much charity and volunteer work as I can, but never had I seen people suffering so much, starving… and children so malnourished that their mother’s sit by their sides and when one asks why, their reply is ‘I’m waiting for my child to die’.
All because they haven’t any food and end up eating things like dried grass.
Babies cannot survive long and so with a lack of milk, their tiny bodies give up the battle after a small period of time.

Even water is a luxury for these people and children. Something which is so basic, and which we take for granted all the time, even that they do not have.
In a village in Sudan I think it was, the villagers dug a whole in the ground and when it rained, the villagers as well as animals would go to this hole to drink water, brown muddy water, but water nonetheless.

Please open your heart, and help Islamic Relief to alleviate at least one person’s suffering, one child’s suffering.

Baking, Cooking, Studying & Scheduling

Hi and salaam to all

Sjoe! I’ve just noticed how few and far between my posts have become.

Apologies for that.
The reason I’ve been rather delayed with posts is because I’ve been focused on achieving 2 particular goals of mine.

I want to be a professional baker as well as finishing my diploma in Event and Wedding Management.

I looooooooovee baking and cooking.
And for the past 10 months, I’ve been avidly attending classes by a particular person.

(Unfortunately I’ll no longer be attending any of her classes as she’s gone on to tell people that I’m apparently rich so she doesn’t know for what I’m baking nor do I need the money, oh and I’ll buy anything… Seriously, the nerve of some people! )

So anyway I’ve switched to another person who has incredible talent and isn’t so petty nor full of assumptions.

Since I’m based in Lenasia, which is south of Johannesburg, I’ve recently launched a blog site in which everyone can view the things I make :-)

I’m quite rather proud of it, so I’d love for you to have a look and send in your comments and criticisms (be kind please).

On the other side, I’ve been busy with assignments, and studies.

And I’ve been doing all of this on Saturday afternoons and Sundays as I work Monday to Friday, & Saturday until 12pm..
Talk about hectic! But I’m glad that I’m enjoying these challenges and though I try to still make time for all of my friends and retain some semblance of a social life , it seems I’ve begun using my calendar/day planner more than ever.
Big thanks to Blackberry for helping me manage everything!

So there you have it, no excuses, although I will begin to make every effort to put up many more posts in future.

My Latest Food Challenge: Homemade Roghni Naan

Its been a while since I’ve posted a homemade recipe and today, since my mom didn’t want roti, she asked me to buy Roghni Naan.

But being rather inspired in the weirdest of moments, I decided I’d rather make the Roghni Naan instead.

So here’s the recipe I used and pictures are attached.

Ingredients:

3 cups Flour
3 tsp Baking Powder
2 tsp Salt
250ml Sour Milk
Sesame Seeds
60ml Butter (Garlic Butter works great)
60ml Oil
Chopped Parsley

Method:

Melt the butter and oil together, add the parsley. Set aside as this will be used for basting the naan.

Now sift the flour, baking powder and salt together.
Add enough sour milk to make a soft dough, now knead it a bit and then divide into about 6 portions.

Roll out and then place on a hot tawa or non-rippled griddle. After the bubbles in the dough come up and its nicely freckled turn over and baste with the oil/butter mixture. Fry for a minute on each oiled side and then place in a plate and cover.
Fry each of the others the same way.
